TARGET AUDIENCE

The aim of this course is to provide delegates with the knowledge and skills required to perform first, second and third-party audits of Food Safety Management Systems as per FSSC 22000 requirements, in accordance with ISO 19011 or ISO 17021, as applicable. All references in this document to ISO standards are to the current versions unless stated otherwise.Delegates who successfully complete this CQI and IRCA Certified FSSC 22000 Lead Auditor Training course (within three years prior to applying to become a certified auditor) will satisfy the training requirements for initial certification as a CQI-IRCA Certified FSSC auditor.

prerequisites

  • Completion of secondary education. An understanding of report writing is desirable.
  • Experience in food chains and the principles that apply to them (HACCP, GMP, GAP legislation…)
  • An understanding of relevant key food safety legislation & prerequisite programmes.
  • A prior knowledge of the requirements of ISO 22000 is required. A minimum requirement is that the standard must be read before the course.
  • Knowledge of the requirements of ISO 22000, which may be gained by completing an IRCA certified FSMS Foundation Training course or equivalent or by self study of the ISO 22000 standard.

On completing the course, delegates will be able to:

  • Audit an FSMS as per the requirements of the ISO 22000:2018 Standard, FSSC 22000 and ISO TS 22002 (all parts)
  • Understand key elements of the ISO 19011 and ISO/IEC 17021 Standards and their application
  • Plan an audit against a set of auditing criteria
  • Successfully execute a Food Safety Management System audit
  • Create clear, concise and relevant audit reports
  • Communicate the audit findings to a client

The course uses extensive participative learning methodologies, using a series of exercises and workshops, discussions, debates and role plays to achieve its aims. The practical exercises are based upon a case study company. However, the procedures, work instructions and data are typical and could relate equally to many different enterprises. The practical exercises have been carefully designed to focus on issues that commonly arise during FSMS audits.
